It’s still August but fall is fast approaching and when those leaves start to fall and the air feels crisp you know Thanksgiving is just around the corner. When we think of Thanksgiving we think of huge turkey dinners which involve a lot of eating and a few extra calories on our bellies and then their are the delicious pumpkin pies, the warm apple pies and all sorts of succulent holiday treats to satisfy your palate.

Why not change it up this year and opt for the healthy but ever so delicious holiday treats? Be the one to show up to the function with the most delicious and surprisingly healthy super food snack this year. What are we talking about you might ask. Well we are talking about the almighty protein ball.

These yummy little suckers have been very popular among those who train for sport, fitness and even those who look to lose weight and want a snack that tastes great but offers amazing  benefits. The great thing about these protein balls is that you can do anything with them. Roll them in almonds, cocoa powder or even chia seed to make them look festive. The adults will love them because they are calorie conscious and an excellent source of protein. Be creative! But most of all enjoy them…they are a gluten-free and guilt-free treat.

3 Tbsp. Vanilla protein powder
3 Tbsp. almond butter or peanut butter
3 Tbsp. dark cocoa powder (or cacao powder to keep it raw)
1 Tbsp. chia seeds
1 tsp. honey
dash of sea salt
1 tsp water

1/4 cup unsweetened shredded coconut for rolling

Combine first 7 ingredients in a food processor and pulse until combined.  If the batter seems too dry, add more water 1/4 tsp at a time until you reach the desired consistency. Roll the dough into 1-1/2″ balls and then roll each ball in shredded coconut. Pop in the refrigerator to set up. Makes about 7 balls.
